I have just bought the Marina disc conversion kit from ESM, along with the remote reservoir and the Lockheed master cylinder (as the advert for the remote reservoir said it was not compatible with original pattern master cylinder).
Is there anything else I need before starting this project?
Also, I have read some posts that mention removal of a washer/seal within the master cylinder. Is that necessary, and which seal is it?

Hi. I have Ford based discs fitted many years ago. The best modification I have ever done. The seal neds to be removed to prevent the pads from continually rubbing on the disk.

The remote brake fluid reservoir will work with the original Lockheed brake master cylinder. It will not work with a pattern/after market master cylinder as the rear upper plug of the pattern master cylinder is of a different size..
You will need to replace the original master cylinder vented filler plug with the non vented type.

Just to get this straight in my head, I use the Lockheed brake master cylinder with a non-vented filler plug and remove the seal as shown in the diagram….is that correct?

Correct!

The clear tubing provided with the remote reservoir is not fit for purpose - it will react with brake fluid and will weep. I had lots of problems getting this to seal and had to replace it after only a few months. I suggest that you discard it and buy some proper EPDM brake hose.

Tygon 2375 8mm , not cheap but good...

Yes it to prevent residual line pressure holding pads in contact, nothing to do with resevoir.
I have the valve removed, marina discs and no remote resevoir. Just check fluid regularly, easy to do, no panels need removing.

That leads to - how do you check the fluid level without pulling up the carpets and removing the panel?

Just lift the carpet and undo the reservoir filler cap to check the fluid level.
You do not have to remove any panels.
