Have changed master cylinder and bled system but note that when I depress brake pedal with the master cylinder filler cap removed a few drops of fluid shoot up out of the filler hole.
Should this happen?

Yes that is completely normal.

The section about the Residual-pressure Master-cylinder (Lockheed), that's basically how your Minor system works.
So your little squirt is a function of the port arrangement being directly below the filler cap and a very small reservoir.
