I need to remove the sender to my Temp gauge and having unscrewed the locking nut/ bush I expected the sender to slide out but no luck
When I gave it a twist the brass sleeve moved out but the business end stayed in
Have I buggered it and how should it come out ?

Possibly busted it.
I have an electrical one myself; from the looks of it, I assume that's a capillary type gauge?
I've not seen one before exactly like yours, but I'd assume it's removed by getting a spanner on the bit with 2 flats, not that nut you've undone.

You have not busted it. :D
Just push the sleeve back towards the transmitter bulb taking care not to bend the capillary tube.
The sleeve is there to stop the capillary tube breaking off in the area of the capillary bulb.
Soak the transmitter bulb in penetrating oil and leave for a while.
Undo the adapter that screws into the head to give a bit of wiggle room.
Clean up the threads and coat with copper ease before re-fitting.

This is the same arrangement as I have fitted to my minor except it has a female nut to secure the capillary bulb.
The adapter (with the two flats) can be male or female dependent upon the temp gauge capillary tube fitted.
