Protecting the inner wings.

I'm currently restoring a 68 Traveller of which the bodywork in now repaired. I will be spraying the car in cellulose paint however I want to ensure that I provide plenty of protection to the hidden areas such as the inner wings.
What is the best protective paint / underseal to use? I am looking to create a good usable Traveller not a concours car hence I don't mind that it will be a textured finish but ideally I would like to over spray it in cellulose body colour. Once complete I will also wax protect.
Any advice much appreciated.
