Can anyone tell me what the advantages of modifying my old shoe braking system to Disc brakes are?

Drums are prone to brake fade when hot. Other than that I can't think of anything !! Fit discs and really you'd need a servo too to get any improvement.
No point in fitting better brakes until you get more rubber on the road with wider wheels and tyres. It is easily possible to lock the wheels with standard brakes, you just lock them up sooner with discs on standard tyres
I've run my Minors and the baby Austin for years on the original drum brakes and they're absolutely fine for normal use. I did put servos on when I got arthritic knees but I don't think most people would need that.
For me the advantage of discs is less maintenance as they self-adjust, whereas with drums you need to take the wheel off (later cars) and adjust them regularly. Of course, it does depend on what mileage you do, but ours are used every day.
