When do spare parts become a vehicle??

Absolutely not casting any aspersions on the vendor, but this intrigues me:

I don't know if the situation is different with LCVs, but if this was a car the section being sold would contain all the ID plates other than the floor pan plate. Is there a point at which this would be defined as a registered vehicle rather than a spare part?

As the vendor isn't offering the identity of the vehicle to go with the cab aspersions should not be cast :)
In theory things might be different with vans however as the chassis number doesn't appear on the chassis I'm not sure how.
I expect body number has replaced chassis number these days.

It is very difficult to tell from the Ebay photos but it would appear that the body number plate has been removed so the vendor (or the previous vendor) seems to have made every effort to remove the previous identity (no doubt POMMReg will tell us if it is otherwise). Had the vehicle been offered with a V5C then if it had all the numbers with it it might even be sufficient to act as the start for a new restoration - lets face it, all the rest of the parts are out there and a lot of them could be new.....
