Google Maps is a strange place I just had a look at this location in Norway from Kim Arne Fjeld 's facebook,

Yes - I was checking the route to an address near Edinburgh and approaching one direction the trees are in full bloom - the other way the trees are bare sticks! At least shows they do update from time to time!

i doubt it's anything to do with updating. there has to be a join somewhere, and they won't be able to do every permutation of a route in the same day so there's bound to be lots of differences.
