whats the risk of not having an overflow pipe on my radiator for any period of time?

in the unlikely event your rad has to purge itself, you'll get a mucky engine bay. or at very least, a wet engine bay. if you're confident that there isn't too much water in there, and that it won't overheat for as long as you're without, you should be fine!

never had one on my car... the worst that happens is you get a mucky stain on top of the rad ;)

No risk, although one member of this forum had a good idea (can't remember who it was), They used a second screenwash bottle as a collector for any overflow from the pipe, and held on with a bracket.
My modern car has a similar recoverable overflow idea.

Yes - I have a catcher bottle on the overflow - and any water coming out is sucked back in when the engine cools.
