Paint Colour Choice

I am currently restoring a 1961 traveller which is currently a grey colour, which I am not that keen on.
I have the whole body shell stripped including engine bay etc. I am intending to have the car resprayed including
engine bay interior and exterior. In terms of popularity am I correct in thinking the safe/most popular colours are
Old English White, Light Blue (is this called smoke Grey?)

I am assuming I would need to change V5 details if I change the colour, is this simple?

Yes it is. I'm not sure how common it is though. There are other light blue colours too such as clipper blue.

I had my traveller done in trafalgar blue, (not a standard traveller colour I believe) It suits it well.

Or go radical and use Limeflower (V Rare but nice).

How about Dodge Viper yellow? There was a factory color called 'Highway Yellow', I think. Hey, you want safe? Yellow is safe!

Smoke Grey was the commonest Minor colour in terms of units off the production line - more minors were painted this than any other colour.

just to answer your final question .. yes just inform the dvla of the colour change.. many people do not bother, but if you decide to sell the car it will give a buyer one less question
