primrose has had a bearing noise coming from her rear end for a while, so i bought a new bearing to replace the one i thought that had gone.
however, it wasnt that bearing that has worn, it was the other one.

can i use the bearing that wasnt making the noise to replace the noisy one or should i replace it so i have a new set or bearings on the back axle?

You know you should replace it :)

By the time youve stripped it all down you might as well replace it and keep your OK one well oiled as an emergency spare.
I assume your talking about the wheel bearings??

Just swap the hubs over - putting the new bearing on where the noisy one is - and refitting the good bearing to the other hub. No point wasting money! Most unusual for rear bearings to give trouble - usually they are 'well oiled' . Hope you renewed the seals while in there.

Just to save digging the new bearing out of the hub - with risk of damage! Also - the old bearing will continue to rotate the way it has done for the last 40 years - it may not like suddenly being asked to run the other way!
