I would not recommend drilling your own hole for the sender!
it is a tapered thread for a start! I think your case calls for a
different thermostat housing which has the sender socket in
it.

or use the head from a 1098 engine?

Well I've looked at Derby wiring products many moons ago (they do have a website!) you can get these thermocouple units which plonk in the radiator then go to a gauge - have a brouse to see if thats useful?
