Whenever I have the clutch down the revs seem to go very low, is this a bad sign?

The tickover will slow a bit as the clutch is a direct mechanical action and not hydralic like many cars, its possible you may have the tickover a bit too slow.

Yes, just up the tickover a bit if you are worried about it stalling....

But if the pedal is going too far down - further than necessary to release the clutch - it will be putting undue loading on the carbon bearing and the crankshaft thrust washers. Make sure there is ~ 1" free play in the clutch pedal when it's at rest. Could also be the carbon thrust bearing is worn away - and now it's steel on steel at the clutch release pad! Although I think you would hear that. A look inside the bellhousing by removing the rubber bungs will tell you how good it is.
