I'm with Footman James, and according to their policy docs, to increase the value, you need to send them new photos with a description of the work which has been done.
Alternatively, get a professional valuer to put a price on it, and they'll probably change the value for you.

Yes the car should be worth more than a grand with good bodywork and good running gear.
For most classic insurance companies you'll need to do a new vehicle condition form with new pics and the description of work done (helps if you have reciepts but not essential)
The club have approved valuers - a list is available by post or on the members area of the Website.

Don't forget to tell them that you have modified your car by exchanging the 803cc for a 948cc engine.
