Adjustable rear dampers

Look like it. Now we will all be bidding on them!
Not seen these before - I guess someone has added the adjustable valves. I have in the past 'adjusted' the inner valves manually - and frankly the difference it made to the damping was not noticeable. using heavier (more viscous) oil IS noticeable.

Should the rear dampers always be replaced in pairs? I have a leak on one side.

Yes, dampers (and brakes) 'should' always be replaced in pairs.

Can you put a cabbage on the other side to balance things out if you have a leek on just one side.
