Recipes

Okay, some of you asked for the recipe for my cherry cake and after digging it out again I found it for you all, here it is;

Ingredients;
8oz plain flour
1 tblsp baking powder
4oz honey
4oz sugar
4oz butter or margarine (if you use olive oil/dairy free marg it is suitable for vegans too)
A couple of handfuls of stoned, fresh cherries (I don't know exactly how many because I got a load from my cherry tree and just threw in as many as seemed right!)

Method;
Preheat oven to Gas Mark 3 and grease a 1lb loaf tin.
Mix baking powder in with the flour.
Melt butter, margarine and sugar together until a smooth, runny mixture is formed.
Gently pour sweet honey mixture into the flour and fold in until well mixed.
Add cherries and fold them in, too.
Pour mixture into loaf tin and bake for 60 to 80 mins, until a skewer stuck in comes out clean.
Remember to lick the spoon and scrape out the bowl, the mixture is yummy!
After baking, leave cake in tin to cool for ten minutes, then gently turn out onto a cooling rack and after another ten of fifteen minutes, tuck in!

The cherries can be substituted with other fruit like a whole overripe banana, sultanas, raisins, nuts - it can even be converted in carrot cake by adding 4 to 8oz finely grated fresh carrot. Spices like nutmeg and cinnamon can be added to the cake mixture to taste.

So there you go, it's very simple and easy, and you have a lovely cake at the end of it all, plus, if you're anything like me, a kitchen covered in flour to clean up afterwards too!
