Is it sensible to put some sort of gasket or v thin padding foam under the engine mount towers when bolting them back on to the floor of the engine bay? to protect the paint of the engine bay?

No, I would just use grease, underbody wax or seam sealer, foam may trap moisture and encourage future rusting.

How about a layer of DENSO tape ?

And when did BMC ever do anything whatever about rust traps, major or not?

As CJ says just grease will do.
