Hi haggis,
Practical Classics did a small feature recently about painting pinstripes, apparently it's a dying art but there are still enthusiasts who do it, and you can go on a course to learn how to do it well yourself if you want. The article makes the point that painted lines last better, as well as looking better, than vinyl.
you could look at this website:
http://www.prosign1.co.uk/
shout if you would like a copy of the article (it's only half a page but it's pretty interesting and has useful pics to guide you if you want to try your hand)
You can get the stick-on pinstripe kits almost anywhere, there's a large range available in my local (small) motor factor and, I think, in my local Halfords as well.

I used masking tape and red paint.
I did it by eye. I know this is not to everyones tastes and cries of 'bodger' abandon but it actualy worked perfectly, certainly better than when I used a stick-on stripe.
With two strips of masking tape and a good look-over from all angles you can get the width and straightness (if thats a word) pretty spot on.
