So I bought Miss Rachel....so I bought her because she had a hanging pedals with a dual master cylinder...
The more time I spend under the dash the less I like the workmanship on this setup...
Has anybody gone back to under the floor master cylinder?
Any insight would be greatly appreciated.

Personally speaking.....
If you've got the additional safety of dual circuit brakes, I wouldn't remove it.
The original braking system can be a PITA to maintain well, and it would be a lot of work to undertake to downgrade what you have.

I was kind of planning on seeing how the whole new hanging pedal assembly works first...
If it doesn't...does anyone know if there is kit for a dual braking circuit and keeping it all mounted under the floor pan??

Yes there is a kit made by Minor Magic in Australia. I believe it's Mazda 323 based and it only appears to be for right-hand drive cars.
