Help with carb please , setting

Engine 1969 minor 1098cc was running when got it but not great so lots new parts fitted so had to replace choke bracket ,before it was stopping after about 3/4 hr running started later on in the day drive into garage fixed choke , took plugs for compression there were pure black soot , I put new condenser in and new rotor arm after fixing choke , it started drive out of garage reving bit high
Then I stopped and screwed the needle nut , ( silly ) now it starts for a second and dies pulled plugs out they are black again. Where do I start to get carb set right I know nothing about old carbs to be honest apart from idle screw etc. is there an adjustment I can start from and work from there. At minute I have idle screw fully off choke is opening and closing nice and tight. ( There’s a good spark at plugs .)
Help be appreciated, trying to get her driving right before I spray it. Thank you. Treat me gently as said don’t know much about old carb.
