Down on the farm we used to paint the mould boards on the plough with grease when not in use to stop them going rusty.

Is there any reason why you would not paint grease on hidden areas of your minor to prevent rust?
It is sticky and will not cake or evaporate like some rust proofers.

Agree 100%. If it is out of sight and open to the elements, then I follow advice given to me many moons ago, ie smear in grease. I always smear thin layer of grease on any threads also.

Is it just a question of keeping oxygen off the surface of the metal, or is it more complicated than that?

Not just oxygen - water as well! The water acts as an electrolyte to facilitate the chemical process of oxidisation of the metal. The ferrous oxide produced on our cars by this process is that dratted thing called rust!
