How much movement between valve guide and stem is too much?
Is there a simple answer?

Good old Calver... 
I don't see anything odd about that passage - but he has made some bloomers in the past! For wear - it's up to you - just give them a waggle and decide... If you have a new guide to compare with -it helps. I recently worked on a head with the worst guide wear I have ever seen - a good 1/16" inch - absolutely amazing....

Just lift the valve out about 1 cm or 1/4 inch and see if it will move sideways when wiggled.
Replacing them is one job where a hammer is the main tool you need, that and a suitable drift and a way of measuring how far in the new ones have gone.

The stepped drift is the important thing., otherwise you will be sure to bu99er them up..... Good opportunity to fit the Mini guides which take the 'top hat' oil seal.. However these are longer - so when fitted from the top (just do one at a time - and a straight edge across the others to get the fitted height right) - they will be protruding too far in to the valve throats. I simply used a largish drill bit to 'machine' the excess away and then tidied them up with a mounted point. Only fit seals on the inlets...
