Hello,
Considering doing a few little jobs tidying up the wiring, for example the interior light in the boot.
What gauge of wire should I buy, as a standard?
Electrical wire gauge/thickness

If it's solely for the boot wiring, 5 amp cable should be ample I would think.

Also the connections to the fuel pump have perished and I will want to replace these too, before they wear out completely. Can I use the same?

Be very wary of that wiring - it's unfused. Imperative a grommet is fitted.
Don't use 5 amp cable for that, 17 amp cable should be fine.

And run the cable through a 'secret switch'...to help thief proof the car....

Re: Electrical wire gauge/thickness
I was going to do two - one on the fuel pump, as a hidden switch, and then a battery cut off switch w/ removable key elsewhere.
