I was hoping that someone had been down this path before and could advise me of any pit falls etc

you will at least need all the original paperwork ,and insurance and road tax,you can get insured on a vin number, plus check import duty ,but I think old cars are exempt? Rules change so often best to ask dvla ,Have you tried google ? :D

I found this plus many more

There is so much false/out of date etc information out there - it really is best to just pitch up at your local DVLA office - lay your cards on the table - and ask them. That's what they are there for!

I have registered cars from the EU which was easier than from the USA.

I have just brought a Renault 4CV over from France. I will be doing what you intent to do with yours.

In the past I have carried out the following when registering cars......

I got my vehicle MOT`d
I insured it.
I got a copy of its heritage certificate from Gaydon showing when it was built (no photocopies allowed).
The EU car no import duty.

The car from the USA had an import duty paid certificate.

I took my paperwork along to my local DVLA office, once the paperwork was in order they booked my car in for an inspection.

I took my car down to the local DVLA office, an appointment is required, they inspected the car to make sure it was what I told them it was.

They then issued me with an age related plate for the year of manufacture (I knew the inspector from 20 years ago, we had worked together, he gave me a decent number for the plate).

When your local DVLA office shuts down (ours will in 6 weeks time) you take the car to your local VOSA (ministry MOT centre) for inspection.
