Painting underneath my baby

Looks OK, why cover it with underseal? It doesn't seal anything.
Waxoyl or similar, on the inner sections and you are good to go.

It's more important to say what you're proposing to do before you apply this paint than what you will do afterwards. I'll be surprised if two people here agree on the "best" system (and if they do, make sure they've tried it and left it a few years, not just read the same adverts). It's quite unlikely that any of us will have tried this exact brand of paint.

I think most would agree that the best paint system depends on how much effort you want to spend on preparation. Bare, bright, clean steel needs a very different approach to "I've knocked the loosest bits off and shown it a hand wire brush". Personally, I dislike conventional underseal, especially applied over rust.

I'm sure it's good tough paint - but as others have pointed out - it's the preparation/rust removal that counts......

That paint will be fine, but ensure you properly rub down and treat rust, then apply a good zinc rich primer, then top coat with the chassis black. Alternatively for a more robust finish, rub down, treat rust, then primer, paint the black on, and then apply stone chip, followed by chassis black on top. I certainly wouldn't apply underseal on top of it.

Ditto preparation, and In the days of steam I served my apprenticeship in a shipyard.
The ships hulls made of steel were protected by something called Jotun Red, jotamastic is a modern equivalent, SML coatings supply it, it aint cheap but if it keeps salt water off supertankers hulls, its going to keep a moggie in pretty good shape, overkill to some, manna from heaven to others, if it were edible anyway.

Well I'm looking to take as much of the underneath of the car back to metal if I can so what's the method from start to finish? And what products/brands to use ?

I would only attack the metal that clearly has signs of surface corrosion,with a wire brush, coarse emery, having previously purchased whichever primer/paint you decide to employ, ready for immediate application.
I am always loathe to open bare good metal to the elements, so if it aint broke dont fix it, just give it another coat.
