Correct running temperature

I have had a look on posts, but can't find a simple answer to the question of 'what temperature' is correct - what temp IS correct for the engine to be at when running well? How do you test it to see what temperature it's 'at', do you test water at thermostat or oil or what??

You fit a temperature gauge - bulb (or electric 'sender' ) goes in the head under the thermostat. Running temp depends entirely on the value of the thermostat fitted - so an 88 degree stat should encourage the engine to ran pretty much at well, 88 degrees !!
