Late to the party as always.......my votes are:

Workmanship : RTGServices in Bristol, and Roy's Welding in Dorset.
Parts :I like to spread the love, I use ESM, BM & MMC Brum mainly. Have used DSN & MGM once or twice, & Newton Commercial seats take a spanking! If I had to choose a favourite -I'd probably go for MMC Brum.
Advice : Mr J Heap of JLH gets top vote, but also John E. Evans was very good to me in terms of advice & parts when I had to replace the gearbox tail a year or so back. He advertises in the MMOC comic.

As for Charles Ware's Morris Minor Centre, (the elephant in the room whose name we don't want to mention) I have used their parts dept a few times and always found them very friendly & helpful. Have had no problems with the quality of parts supplied by them.

Of the non-Minor specific suppliers, I have used Vintage Car Parts & found them helpful & knowledgeable. Think the website is http://www.vintagecarparts.co.uk/. Minispares also have some useful stuff for Minor owners.
