Dan, I'm the same, funnily enough - I'm not squeamish at all, but because I lack the facilities to hunt/fish/raise my own meat animals, don't eat the crud for sale at the supermarkets. Now, if I went small game shooting or fishing, I'd quite happily skin, gut and cook it all myself.
And just for the record, I am trying to teach myself taxidermy. That is where the skinning comes in. The bottom drawer of my freezer currently contains a blackbird fledgling (cat kill), a stoatsicle (skinned, donated by another taxidermist) and a mousecicle (cat kill again, skinned). I've tanned the skins (so blinking tiny!) and am keeping the bodies to pose how I want them to look when I get round to carving the foam mannequins for them.
Probably more information than anyone needed to know, really!
Suffice to say, I need a second freezer quite urgently.
