On the speedo thing - mine have always been so tight in the dash that the screws seldom get re-tightened.
Personally I couldnt lose my drivers side glove box. Its far too useful for keeping a small chamois, bag of sweets, odments..etc.. even if you do have to dive between steering wheel spokes to access it.
Here's how I've fitted mine. They're partially obscured by the indicator stalk but you can still see where the needles are.
The two-guage moutning plate is a common enough part and it attaches to one of the glovebox 'hinge' screws underneath.
The larger guage is a tacho. I can still use my glovebox with it there.

Heres another idea, I vac formed some 'boxes' in our prototype shop and mounted my dials in front of the heater. I still have the vac forming tool at work, so if anyone wants any then let me know, as our design studio is being shut down at the end of March and I am losing my job. I made these in black styrene, and I cut the holes and slots in them by hand and made simple aluminium plates to fix them to the underside of the dash.
