I have a second hand Lockheed remote servo on the shelf. When I shake it you can hear brake fluid in the drum. I don’t think this is normal. Has anyone had this experience before ?

as bmcecosse says the sevo is knackered. You can get repair kits but it depends what is wrong, take it apart and have a look.
There is no reason why you would definitely need a servo just because you are fitting disk brakes. I have disk brakes and I don't have a servo because it locks the brakes up to easily. Its a personal choice, just don't get pushed into buying one just because you have disk brakes.
