Do what I always tell the girls- stop breathing!!
Never found an answer yet, and however dry the carpets are, you will get "condensating" to an extent. With wet carpets it tends towards huge blobs of water, as though a shower head has been pointed at it, guessing you're not at that stage? Judicious use of the windscreen demister vents can help, but watch that the extreme temperature of the heater output doesn't crack/shatter the glass :-?

This is prevention rather than cure but these might help out;

Last week someone told me to place plastic coke type bottles of warm water against the screen or lying down on top of the demister vent to defrost the screen & once the heater is warm remove the bottles. I haven't tried it myself but might be worth a go.

I used to use a pre-icer just a tiny bit on a cloth and wiped round the screen to stop the ice forming. It does work but if you use too much it leaves smears on the screen, making forward vision awkward.

Just run the fan heater for 5 minutes before you set off - it works.

Dry the window very well and wipe a small amout of fairy liquid on the back window, this may leave it a bit smeared but will stop the condensation a bit. Obviously dont put it on the windscreen!

Or a 3kW fan heater on an extension lead....

Really nothing better than warm air to de-ice, and keep de-iced. So many times I've done all tsorts of tricks, got in the car, breathed out- and hey presto- iced up agen!

AU's comment is very relevant. Unless you have been in and out repeatedly in the rain then it's very likely water is leaking in. Until you prevent this, condensation will just re-occur.
Older and more confused than I could ever imagine possible.

Defrost the screen with hand hot water.

several advantages.

Quick
Environmentally friendly
Doesn't refreeze when you drive off
Defrosts inside and out
Won't scratch the glass
Can be used on all the windows
Can't damage the rubber or paint

To name but a few!

But I think the problem is keeping the inside of the car dry. - I use the air conditioning to dry the passenger compartment.

could be due to us sweating.

For me I either open the quarterlight or blast my air con on the glass and it will demist straight away.

You could use a dehumidifier to absorb moisture to prevent it from happening?
