As MarkyB said, you pull the plunger out while you're putting the grease in. Then you screw the top back on the gun, push the tab, and push the plunger back in.

There are different mechanisms for holding the plunger out after the gun has been filled.
On mine you pull on a chain against the spring then slip the chain into a slot to keep the spring compressed while you refit the top. You unhook it once the gun is together.
You may need to twist the handle or push the tab to lock your gun.
Practice doing it before you fill the gun or you'll end up with grease everywhere.
As her indoors for any old hand towels that get replaced as they are great for wiping grease off your hands etc.
