After driving for a while my brakes start intermittently sticking (when the brake stick on the peddle is up and has no movement when first pressed). The cylinders were replaced recently so my guess is that it is to do with the servo.
Is there any way of quickly disabling the servo (to identify if it is the problem)?

Perhaps re-visit the cylinders, as you have just changed them. Did you replace the shoes as well. And did you re-adjust the the shoe adjusters?

Cylinders & shoes replaced (by garage for MOT), I'm reluctant to touch brakes but Am after a way to identify the cause of the issue.

You could bypass the servo with a short length of brake pipe, but it would mean bleeding them all again.
If you have drums, not discs, then why the servo?

Indeed - just throw the wretched servo away...... But as a test -when this happens - if you release a bleed nipple is there a squirt of fluid, and then the brakes are free again? Most often 'sticking on' brakes are down to the master cylinder, although it could well be the servo......

I had a similar issue, and I found that whats needed was to bleed the servo, crack open the outlet (and possibly inlet), whilst getting someone to depress the brake pedal. This may be required a couple of times, but always seems to work for me.
