Does anybody know how to check an Ital piston for high or low compression, ie; depth of dish, number on top etc?

Dunno for sure - just eyeball it - if it looks shallow then it will be high. Engine number would give a clue - often has an H for high and L for low.

I gave two ways of telling - no-one else has come up with a better way so far!

The bigger dish in low comp pistons is very obvious.
